Join us on Monday, January 14th for tailored tips and actionable take-aways from Hervé Houdré Founder at H2 Sustainability Consulting, one of the world’s strongest advocates of sustainable hospitality, and Chloe Vichot, Founder of Ancolie, one of the most sustainable restaurant and catering services in New York City, on how to align purpose and profit. Ancolie will also be providing delicious balanced dishes in reusable glass jars during the luncheon. 

We will address questions like:

About the speakers: 

Hervé Houdré is among Europe’s and America’s most respected hoteliers. He was born in an inn in France’s historic Loire Valley, known for its Renaissance architecture, lush gardens and world-famous wineries. He has enjoyed a rewarding hospitality career managing prestigious hotels such as the Plaza Athénée-New York, the Hôtel de Crillon-Paris, the Plaza Athénée-Paris, the Willard InterContinental-Washington D.C. and the InterContinental Barclay-New York. Houdré was recognized as the 2006 Independent Hotelier of the World by HOTELS magazine readers. A leader in sustainability, in 2006 he published Sustainable Hospitality© – Sustainable Development in the Hotel Industry, a white paper promoted by Cornell University’s Center for Hospitality Research. He co-edited a book, Hotel Sustainable Development: Principles and Best Practices, published in 2011 by American Hotel & Lodging Educational Institute. Hervé’s efforts and passion to promote sustainability in his industry have been highlighted across a wide spectrum of media in the US and abroad. He has lectured at New York University, New York Institute of Technology, Michigan State University, Tourism College of Zhejiang and in trade conferences such as the New York Hotel Show, America’s Lodging Investment Summit and many others.

 

Chloe Vichot is the Founder of Ancolie and Co-Founder of Fresh Bowl. She has been featured on the Cherry Bomb list of the top 100 Inspiring Women in the food industry. Since 2012, Chloe has focused on living her dream and opening her own food business. In 2016, she opened Ancolie, a carbon-neutral catering service and restaurant in the West Village in Manhattan. Ancolie is the recipient of multiple awards, including a four-star rating by the Green Restaurant Association (highest rating) and is a carbon neutral establishment. Already the recipient of numerous awards, including a four-star rating by the Green Restaurant Association (highest rating), Most Innovative Award by the Green Restaurant Association and the Normal Buchbinder Award for the work Ancolie does in the community. In 2018, she also co-founded Fresh Bowl, the first plastic-free vending machine selling fresh and healthy food.
